How to Make Homemade Dark Chocolate Ice Cream

Ingredients:
- 130g Dark Chocolate
- 10g Unsweetened Cocoa Powder
- 4 X Egg Yolks
- 500ml Full Fat Milk (Pasteurised if Possible)
- 100ml Full Fat Single Cream
- 70g Caster Sugar
Instructions:
- Bring the milk to a boil in a saucepan.
- Mix the sugar and cocoa powder. Then add the egg yolks and whisk vigorously.
- Slowly pour in the hot milk and stir.
- Pour the mixture into the saucepan and stir over a low heat until it thickens and covers the back of a spoon (83 °C if you are using a cooking thermometer).
- Break the chocolate into small pieces into a bowl.
- Pour the hot mixture onto it and allow the chocolate to melt for 2 minutes before blending it with a whisk.
- Add the single cream and mix.
- Pour into a bowl, cover with clingfilm and leave to cool.
- Refrigerate until it is very cold. Then pour the mix into your SnoMaster Ice Cream Maker and churn.
- Serve as soon as ice cream is ready or freeze for later.
